The Monsooning process consists of exposing natural coffee beans in layers of 4-6 inch thickness to moisture-laden Monsoon winds in a well ventilated brick or concrete-floored warehouse. This process is carried out on the West Coast of India, making use of the winds from the Arabaian Sea during the Southwest Monsoon months of June through September. The color, shape, and size of the beans as well as their aroma and taste are the results of special post-harvest processing.

This coffee is produced naturally in Aceh in the north of Sumatra around Lake Tawar. This area is also called the Gayo Mountains. Arabica coffee from this region is grown at an altitude of 1100-1300 meters. All coffee is cultivated by small farmers who each possess approximately one hectare of plantation, producing up to 1000 kilos per year (which corresponds to approximately 700 kg of export quality). The Sumatra Mandheling Raja Gayo is a semi-washed coffee.

Only the red, ripe berries are picked by hand, resulting in the best quality in taste and aroma. Immediately after picking, the berries are poured and then dried. This drying often takes place at the farmer's house on plastic sails. Further processing will ultimately take place at the cooperatives.

Of the three non-volcanic regions, Huehuetenango is the highest and driest under cultivation. Huehuetenango, is at the foot of the Cuchumatanes, the highest non-volcanic mountain range in Central America. Coffees from Huehuetenango are exceptional coffees with distinct acidity and fruited flavors.
Cupping Notes: sweet acidity, citrus notes, pleasant fruity notes, strawberry and plum, solid body, balanced, chocolate, complex, clean and nice aftertaste.
